Tri-Tip with Chipotle Rub

This succulent chipotle-rubbed tri-tip is a fantastic choice for those seeking a punchy, savoury main that fits into a balanced lifestyle. Usually a prized cut for its rich marbling and tender texture, the tri-tip takes beautifully to the smoky heat of chipotle chillies. By using a dry rub rather than a sugary glaze, you achieve a deep, charred crust that enhances the beef’s natural flavours without the need for unnecessary additives.

As a diabetes-friendly option, this high-protein dish is both satisfying and nutritious when paired with charred Mediterranean vegetables or a crisp green salad. The two-zone grilling method ensures the steak remains juicy in the centre while developing a bold, spicy exterior. It is an ideal centrepiece for a weekend barbecue or a healthy mid-week dinner that the whole family will enjoy.

Ingredients for Tri-Tip with Chipotle Rub

  • 2 - 1.1kg tri-tip steak (about 2" thick)

  • Kosher salt

  • Chipotle Rub

How to make Tri-Tip with Chipotle Rub

Sprinkle tri-tip with kosher salt. Massage Chipotle Rub into meat. Let steak sit at room temperature for 1 hour or refrigerate uncovered overnight. Bring to room temperature before grilling.

Build a two-zone fire in a charcoal grill, or preheat a gas grill to medium-high. Cook 3-4 minutes per side over direct heat until nicely charred. Transfer to low-heat side (or lower gas grill heat to medium) and cook an additional 6-8 minutes per side or until an instant-read thermometer registers 49°C for rare (steak will carry over to 52°C, or medium-rare, as it rests).

Transfer meat to a carving board; let rest for 10 minutes. Thinly slice against the grain.
