Garlic, Oregano, and Lemon Vinaigrette

This vibrant garlic, oregano, and lemon vinaigrette is a versatile addition to any kitchen, offering a punchy Mediterranean flavour profile. The use of whole chopped lemon provides a unique texture and a sophisticated bitterness that balances the richness of the extra-virgin olive oil. This heart-healthy dressing is naturally packed with antioxidants and healthy fats, making it a nutritious choice for those looking to enhance their meals without relying on shop-bought alternatives.

As a brilliant example of a heart-healthy condiment, this dressing works beautifully drizzled over grilled sea bass, roasted Mediterranean vegetables, or a simple tomato salad. The inclusion of anchovies adds a deep, savoury umami base that complements the fresh herbs perfectly. You can easily prepare this vinaigrette up to two days in advance, allowing the flavours to marry together in the fridge before serving at your next dinner party or family lunch.
