This elegant rosemary trout with cherry-tomato sauce is a wonderful way to enjoy fresh fish as part of a heart-healthy diet. The trout is gently pan-fried with fragrant rosemary sprigs tucked inside, allowing the herbal notes to infuse the delicate flesh. By using a mix of colourful heritage tomatoes for the sauce, you create a vibrant, fresh accompaniment that balances the richness of the fish with a sharp splash of balsamic vinegar.
Quick enough for a weeknight supper but sophisticated enough for a weekend dinner party, this dish provides plenty of essential omega-3 fatty acids without the need for heavy sauces. Serve it alongside some steamed seasonal greens or crushed new potatoes for a balanced and nutritious meal that celebrates simple, high-quality ingredients.
