Watermelon, Rocket, and Pine Nut Salad

This vibrant watermelon, rocket and pine nut salad is a perfect example of how simple, fresh ingredients can create a sophisticated balance of flavours. The sweetness of the chilled watermelon provides a cooling contrast to the peppery bite of baby rocket, while toasted pine nuts add a delicate crunch. A sharp lemon and red wine vinegar dressing ties the components together, creating a dish that is as beautiful to look at as it is to eat.

As part of a heart-healthy diet, this light salad is naturally hydrating and packed with antioxidants. It makes an excellent starter for a summer dinner party or a quick, nutritious lunch when you want something refreshing yet satisfying. For the best results, use a high-quality extra-virgin olive oil and serve immediately to maintain the crisp texture of the greens and the juiciness of the fruit.
