This sausage and piquillo pepper sandwich is a sophisticated take on a classic roll, offering a vibrant Mediterranean twist. The combination of salty green olives and sweet roasted peppers provides a wonderful contrast to the savoury, high-protein sausages. Using a sturdy ciabatta ensures the roll holds up beautifully against the charred meats and peppery baby rocket, making it a satisfying option for a quick midweek dinner or a robust weekend lunch.
Ideal for those seeking a protein-rich meal without sacrificing flavour, these sandwiches are incredibly versatile. You can experiment with different varieties of shop-bought sausages, such as spicy chorizo or herby pork, depending on your preference. Serve these warm for the best experience, perhaps with a side of lightly dressed seasonal greens for a complete and wholesome meal.
