Ingredients for Smoked Turkey, Black Bean, pepper and Corn Salad

  • 725ml (about 350g ) diced, cooked smoked turkey breast

  • 1 can (450g) black beans, rinsed and drained

  • 350ml fresh corn kernels

  • 150g cherry tomatoes, halved

  • 150g diced peppers (any colours)

  • 1/2 cup finely chopped red onion

  • 3 cups rocket

  • 1/2 cup chopped fresh mint (plus leaves for garnish)

  • 1 tablespoon finely chopped garlic

  • 120ml tomato juice

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon sherry (or balsamic) vinegar

  • 1 tablespoon olive oil

How to make Smoked Turkey, Black Bean, pepper and Corn Salad

Combine turkey, beans, corn, tomatoes, peppers and onion in a bowl. Whisk all dressing ingredients in another bowl. Season with salt and pepper. Add dressing to turkey mixture and toss to combine. Divide rocket among 4 plates and top with turkey salad.
