These spicy garlic pickled mushrooms offer a punchy, vibrant addition to any grazing board or larder. This low-sugar recipe transforms simple button mushrooms into a zesty, aromatic condiment using a sharp white vinegar brine infused with garlic and Fresno chillies. Ingredients for Spicy Garlic Pickles
475ml white vinegar
120ml sugar
2 tablespoons kosher salt
6 garlic cloves, halved
1 Fresno chilli, thinly sliced into rings, seeded
450g button mushrooms, trimmed, quartered
1 tablespoon crushed red pepper flakes
How to make Spicy Garlic Pickles
Bring vinegar, sugar, salt, and 475ml water to a boil in a medium pot over high heat, stirring occasionally. Reduce heat to medium-low and simmer 10 minutes.
Place garlic, chilli, mushrooms, and red pepper flakes in a heatproof resealable container or jar (divide among several containers if necessary). Pour hot brining liquid over mushroom mixture. Let cool to room temperature, then cover and chill at least 2 hours before serving.
