Spicy Garlic Pickles

These spicy garlic pickled mushrooms offer a punchy, vibrant addition to any grazing board or larder. This low-sugar recipe transforms simple button mushrooms into a zesty, aromatic condiment using a sharp white vinegar brine infused with garlic and Fresno chillies. The red pepper flakes provide a gentle, building heat that complements the earthy notes of the mushrooms, making them a versatile choice for those who enjoy a savoury snack with a bit of a kick.

Quick to prepare and naturally vegan, these pickles are an excellent make-ahead option for entertaining or everyday meals. They work exceptionally well served alongside cold meats, tossed through a crisp green salad, or even used to garnish a spicy Bloody Mary. For the best texture, ensure they have chilled thoroughly in the fridge, allowing the cloves of garlic and chilli to fully infuse the brine.
