Greek Country Salad

This vibrant Greek country salad is a celebration of fresh, peppery greens and aromatic herbs. Unlike a standard village salad, this version focuses on a nutrient-dense blend of escarole, mustard greens, and dandelion leaves, providing a sophisticated bitterness that balances beautifully with a bright lemon and honey dressing. It is an excellent choice for those seeking a refreshing, plant-based dish that captures the rustic flavours of the Mediterranean countryside.

As a versatile vegan side dish, this salad pairs wonderfully with grilled vegetables, crusty sourdough bread, or a hearty bean stew. The combination of flat-leaf parsley and plenty of fresh dill adds a signature Greek fragrance, while the spring onions provide a mild, savoury crunch. It is a simple yet elegant way to incorporate more seasonal leaves into your diet, offering a light and healthy accompaniment to any main course.
