This vibrant green beans and rocket side dish is a wonderful way to elevate simple seasonal vegetables. The combination of tender blanched beans and the peppery punch of fresh rocket creates a light, sophisticated flavour profile that is finished beautifully with a hint of citrus. It is a versatile vegan accompaniment that works equally well for a Sunday roast or a quick midweek dinner.
Packed with nutrients and naturally low in calories, this dish focuses on fresh, whole ingredients and minimal preparation. The golden sautéed garlic adds a lovely depth of savoury flavour, while the lemon zest provides a bright, zingy lift. Serve it alongside roasted Mediterranean vegetables or grilled plant-based proteins for a healthy, balanced plate that looks as good as it tastes.
