This vibrant green leaf lettuce, pomegranate and almond salad is a celebration of fresh textures and bright flavours. The peppery notes of the watercress perfectly balance the sweetness of the fruit, while the toasted almonds provide a satisfying crunch. Dressed in a simple, zesty lime vinaigrette, this vegan dish offers a sophisticated alternative to a standard side salad, making it a beautiful addition to any dinner table.
Ideal as a light lunch or a refreshing accompaniment to roasted vegetables and grains, this recipe is naturally healthy and rich in antioxidants. The ruby-red pomegranate seeds add a festive touch of colour, making it as much a feast for the eyes as it is for the palate. Serve immediately after tossing to keep the leaves crisp and the nuts crunchy.
