Miso, Carrot, and Sesame Dressing

This vibrant miso, carrot and sesame dressing is a versatile vegan staple that brings a wonderful umami depth to your kitchen. The combination of sweet grated carrots and pungent ginger creates a fresh, zingy base, while the white miso provides a rich, savoury saltiness. It is an excellent way to elevate a simple green salad or to add a burst of complex flavour to a nourish bowl filled with grains and steamed seasonal vegetables.

Quick and easy to prepare, this homemade dressing is a much healthier and more flavourful alternative to shop-bought versions. The addition of toasted sesame seeds and oil provides a nutty finish that perfectly balances the acidity of the rice vinegar. Whether you are meal prepping for the week or looking for a fast way to brighten up a midweek dinner, this nutritious condiment is a reliable fridge essential.
