These orange-roasted baby carrots offer a vibrant and sophisticated twist on a classic side dish. By first steaming the slender carrots under foil with fresh orange juice and zest, the natural sweetness of the vegetable is enhanced by a bright, citrusy depth. The final roast at a higher temperature allows the honey to caramelise, creating a sticky, golden glaze that beautifully coats each carrot.
This simple vegetarian dish is a versatile addition to any menu, whether you are serving a traditional Sunday roast or a lighter midweek dinner. Each bite provides a satisfying contrast between the tender centre and the slightly charred, sweet exterior. Finish with a flourish of crunchy sea salt flakes and a drizzle of quality olive oil to elevate the flavours and add a touch of professional flair to your table.
