Brussels Sprouts with Chestnuts

Brussels sprouts with chestnuts is a quintessential winter side dish that brings a touch of indulgence to any festive spread. This vegetarian recipe elevates the humble sprout, transforming it from a simple vegetable into a rich, savoury accompaniment. By simmering the sprouts in a seasoned butter emulsion before browning, you unlock a nutty sweetness that pairs beautifully with the earthy, crumbled chestnuts. It is a comforting combination of textures that even the most reluctant sprout eaters will find hard to resist.

This versatile dish is an excellent choice for a Sunday roast or a traditional Christmas lunch, providing a luxurious contrast to roasted roots and potatoes. The addition of double cream creates a velvety finish that coats the vegetables, ensuring every bite is full of flavour. For the best results, use high-quality shop-bought roasted chestnuts to save time without compromising on that characteristic smoky aroma. Serve it piping hot alongside your favourite main course for a truly satisfying seasonal meal.
