Feta, Cucumber and Spinach Pita Sandwiches

These feta, cucumber and spinach pita sandwiches offer a vibrant and refreshing take on a vegetarian lunch. Combining the salty tang of feta cheese with the crunch of hothouse cucumber and the sweetness of sun-dried tomatoes, this recipe is a masterclass in balancing textures. The addition of fresh mint and a sharp red wine vinegar dressing ensures every bite is bright and herbaceous, while the baby spinach adds a boost of leafy greens.

Ideal for a quick midweek meal or a nutritious desk-side lunch, these stuffed pitas are as versatile as they are delicious. The spicy garlic yoghurt sauce provides a cooling yet piquant finish that ties the Mediterranean flavours together perfectly. For the best results, serve the pitas while they are still warm from the oven to contrast with the crisp, cool salad filling.
