This vibrant roasted red pepper and feta dip is a versatile addition to any vegetarian spread. By charring the peppers under the grill until the skins are blackened, you unlock a deep, smoky sweetness that contrasts beautifully with the salty, tangy notes of the feta cheese. A splash of quality extra-virgin olive oil and a hint of fresh garlic bring the ingredients together into a silky, luxurious puree that is as colourful as it is delicious.
Perfect for entertaining, this make-ahead dip actually improves with time as the ingredients meld in the fridge. Serve it chilled alongside toasted pitta bread, crunchy crudités, or as part of a Mediterranean-inspired grazing board. It also works brilliantly as a savoury spread in sandwiches or dolloped over grilled courgettes for a light and healthy lunch.
