This skillet cornbread with bacon fat and brown sugar is a soulful addition to any table. By using a cast-iron frying pan, you achieve a wonderfully crisp, golden crust that contrasts beautifully with the tender, moist crumb inside. The addition of brown sugar provides a subtle sweetness that balances the savoury depth of the bacon fat, making it an irresistible accompaniment to hearty stews, chillis or a simple Sunday roast.
Ideal for those seeking a comforting, homemade side dish, this recipe relies on stone-ground cornmeal for an authentic texture. It is a versatile bake that works just as well for a quick midweek meal as it does for a festive gathering. For the best results, serve it warm from the oven with a generous knob of salted butter or a drizzle of honey.
