Ingredients for Salsa de árbol

  • 45 ml extra-virgin olive oil

  • 3 dried chiles de árbol, deseeded, chopped

  • 2 garlic cloves, finely grated

  • 410 g canned diced fire-roasted tomatoes

  • kosher salt, to taste

  • 30 ml fresh lime juice

How to make Salsa de árbol

  1. Heat oil in a medium saucepan over medium heat.

  2. Add the chiles and garlic, and cook, stirring constantly, until lightly toasted and very fragrant, about 30 seconds.

  3. Add the tomatoes and 250 ml of water, then increase the heat to medium-high. Cook, stirring occasionally, until most of the liquid has evaporated and the tomatoes are very tender, about 15 minutes.

  4. Season the tomato mixture with salt. Using a potato masher, mash until the consistency resembles a chunky salsa.

  5. Allow to cool, then stir in the lime juice.

  6. Do Ahead: The salsa (without lime juice) can be prepared up to 3 days in advance. Cover and chill in the fridge. Add lime juice just before serving.
