Ingredients for Seed and nut bread

  • 50 g chia seeds

  • 20 g psyllium husks

  • 320 g cooked quinoa

  • 375 ml water

  • 160 g sunflower seeds

  • 80 g flaxseeds

  • 120 g roughly chopped almonds

  • 60 ml extra virgin olive oil

  • 30 ml maple syrup

  • 2.5 g sea salt flakes

How to make Seed and nut bread

  1. Preheat the oven to 160°C (fan). Line a 10cm x 21cm loaf tin with non-stick baking paper.

  2. Place the chia seeds, psyllium husks, quinoa, and water in a large bowl and mix to combine. Allow to stand for 15 minutes.

  3. Add the sunflower seeds, flax seeds, almonds, oil, maple syrup, and salt to the bowl, and mix well to combine.

  4. Pour the mixture into the prepared loaf tin.

  5. Bake for 1 hour 30 minutes, or until the loaf is firm to the touch.

  6. Allow the loaf to cool in the tin for a few minutes before turning it out and slicing to serve.
