Ingredients for Watermelon salad with radishes and mint

  • kosher salt, to taste

  • freshly ground black pepper, to taste

  • 1 bunch red radishes, cut into 3 mm slices

  • 30 ml red wine vinegar

  • 20 ml extra-virgin olive oil

  • ½ red onion, cut into thin slivers

  • 2 kg watermelon (¼ of a large melon), rind removed, flesh cut into 2.5 cm cubes

  • 30 g torn mint leaves

How to make Watermelon salad with radishes and mint

  1. Dissolve a spoonful of salt in a large bowl of ice water. Let the radishes sit in the salted ice water for a few minutes to crisp.

  2. In a large bowl, whisk together the vinegar, oil, and 1 teaspoon of salt.

  3. Drain the radishes and add them to the bowl along with the onion and watermelon.
