  • 2 large egg whites

  • 450 g new potatoes, about 2.5 cm in diameter

  • 10 ml kosher salt

  • 5 ml finely ground black pepper

  • 5 ml finely chopped rosemary

  • 5 ml finely chopped parsley

How to make Crispy salt and pepper potatoes

  1. Preheat the oven to 200°C (fan) and line a rimmed baking tray with baking parchment.

  2. In a large bowl, whisk the egg whites until foamy, ensuring there are no liquid whites remaining.

  3. Add the potatoes to the bowl and toss until they are well coated with the egg whites.

  4. Transfer the coated potatoes to a strainer or colander to drain off any excess egg whites.

  5. Season the potatoes with salt, pepper, and herbs.
