Ingredients for Best deviled eggs
6 large eggs
60 g mayonnaise
5 ml Dijon mustard
0.5 ml cayenne
Garnishes: paprika, chopped fresh chives
Pastry bag fitted with 1.25 cm star tip (optional)
How to make Best deviled eggs
Place the eggs in a 3-litre heavy saucepan and cover them with cold water by about 4 cm.
Bring the water to a rolling boil over medium heat, partially covering the pan.
Once boiling, reduce the heat to low and cover the pan completely. Cook the eggs for 30 seconds.
Remove the pan from the heat and let the eggs stand, covered, for 15 minutes.
Using a slotted spoon, transfer the eggs to a bowl filled with ice and cold water to stop the cooking process. Let them sit for 5 minutes.
Peel the eggs and slice them in half lengthwise.
Carefully remove the yolks and place them in a bowl. Mash the yolks with a fork until smooth.
Add the mayonnaise, mustard, and cayenne pepper to the mashed yolks and stir with the fork until well combined. Season with salt and pepper to taste.
Fill a piping bag with the yolk mixture and pipe it into the egg whites.
