Ingredients for Fried egg bánh mì
120 ml mayonnaise
30 ml fish sauce
90 g unsalted butter, at room temperature
8 large eggs
kosher salt and freshly ground black pepper
4 baguettes (15 cm), halved lengthwise
125 g English cucumber, deseeded, thinly sliced lengthwise into strips
2 jalapeños, deseeded, cut into rings
2 medium carrots, shredded
12 sprigs coriander
Sriracha, for serving (optional)
How to make Fried egg bánh mì
Preheat the oven to 200°C (fan oven 180°C).
In a small bowl, whisk together the mayonnaise and fish sauce until well combined.
Heat 1 tablespoon of butter in a nonstick frying pan over medium heat until the foam subsides.
Crack 2 eggs into the pan, season with salt and pepper, and reduce the heat to low.
Cook the eggs slowly until the whites are set but the yolks remain runny, about 2–3 minutes. Transfer them to a plate and keep warm.
Repeat the process with the remaining 3 tablespoons of butter and the 6 eggs, cooking them in batches.
Spread the remaining 2 tablespoons of butter on the baguettes.
Place the baguettes on a baking tray and toast in the oven for 10 minutes until golden.
Season the cucumber, jalapeños, and carrots with salt and pepper to taste.
To assemble the bánh mì, spread each half of the baguette with the fish sauce mayonnaise, then top with 2 eggs, some of the vegetables, a few sprigs of coriander, and Sriracha, if desired.
Serve immediately.
