How to make Instant pot Thai coconut clams

  1. Heat the oil in the pressure cooker using the sauté function. Add the shallots and sauté for 3–5 minutes, until soft and browned at the edges.

  2. Meanwhile, peel the outer layers from the lemongrass stalk and bruise the inner core with the side of a heavy knife to release the flavour. Finely chop the bruised core.

  3. Add the chopped lemongrass to the pot along with the stock, ginger, jalapeños, fish sauce, and brown sugar. Stir until the sugar has dissolved, then bring the mixture to a simmer and cook for 1 minute.

  4. Stir in the coconut milk and simmer for 5 minutes, until the sauce has reduced by a third and is beginning to thicken.

  5. Add the clams, cover the pot, and cook on low pressure for 1 minute. Release the pressure manually and discard any clams that did not open.

  6. Taste the sauce and season with salt and pepper to your liking.

  7. Serve the clams in bowls, spooning some broth over them and garnishing with scallions, coriander, and a squeeze of lime juice.
