Ingredients for Roasted garlic and parmesan baked halibut

  • 1 head garlic

  • 7.5 ml olive oil

  • 15 g unsalted butter, softened

  • 450 g halibut, skin removed, cut into 4 even fillets

  • kosher salt, as needed

  • freshly ground black pepper, as needed

  • 120 ml mayonnaise

  • 50 g grated parmesan

How to make Roasted garlic and parmesan baked halibut

  1. Preheat the oven to 190°C (fan) or 200°C (conventional).

  2. Cut off the top of the head of garlic and brush away some of the outer skin, leaving the individual cloves wrapped.

  3. Place the garlic on a piece of foil, drizzle with olive oil, then wrap the foil around it. Bake in the oven for 45 minutes, until completely soft. You will only need six cloves for the recipe, but it's worthwhile to roast the whole head for spreading on crusty bread or adding to salads.

  4. Increase the oven temperature to 220°C (fan) or 230°C (conventional).

  5. Heat the butter in an oven-proof frying pan over low heat. Season both sides of the halibut with salt and pepper.

  6. Once the butter has melted, add the halibut to the pan and transfer it to the oven. Cook for 10 minutes, until the fish is just cooked and opaque throughout.

  7. While the halibut cooks, blend together the six cloves of roasted garlic, mayonnaise, and parmesan until smooth.

  8. When the halibut is ready, remove it from the oven and generously spread the garlic mayonnaise mixture over the top.

  9. Switch the oven to grill and return the pan to the hot oven for 4 minutes, until the top is almost entirely golden brown.

  10. Remove from the oven and serve immediately.
