Ingredients for Shrimp and basil stir-fry
3 fresno chiles, coarsely chopped
6 garlic cloves, smashed
50 g caster sugar
30 ml fish sauce
5 ml salt (kosher)
60 ml vegetable oil or grapeseed oil, divided
450 g large prawns, peeled, deveined
60 g basil leaves (about 1 bunch)
lime wedges (for serving)
How to make Shrimp and basil stir-fry
Blend the chiles, garlic, sugar, fish sauce, salt, and 45 ml of oil in a blender until smooth. Transfer the marinade to a medium bowl, add the shrimp, and toss to coat. Let the mixture sit for 10 minutes.
Heat the remaining 15 ml of oil in a large non-stick frying pan over medium-high heat. If necessary, work in batches to avoid overcrowding the pan. Transfer the shrimp to the frying pan, leaving the marinade behind, and cook until deeply browned around the edges and the flesh is opaque, about 1 minute per side.
Remove the frying pan from the heat and add the basil. Toss vigorously until the basil is wilted.
Transfer the shrimp mixture to plates and serve with rice and lime wedges on the side.
