Smothered Pork Chops with Mushrooms

These smothered pork chops with mushrooms offer a truly comforting, high-protein dinner that feels elevated despite its simplicity. By searing the meat first and then simmering it slowly with earthy cremini mushrooms and fragrant rosemary, the pork remains incredibly tender while creating a natural, rich gravy. The use of bone-in shoulder chops ensures maximum depth of flavour, making this a satisfying choice for those seeking a hearty, traditional meal.

Ideal for a balanced midweek supper, this one-pan dish is best served alongside creamy mashed potatoes or steamed seasonal greens to soak up the savoury onion sauce. It is an excellent way to transform affordable cuts of pork into a restaurant-quality main that the whole family will enjoy. The combination of simple pantry staples and fresh herbs makes it both accessible and nourishing.

Ingredients for Smothered Pork Chops with Mushrooms

  • 900g bone-in pork shoulder chops

  • 80ml plain flour

  • 3 tablespoons vegetable oil, divided

  • 1 large onion, halved and sliced

  • 230g fresh cremini mushrooms, sliced

  • 1 teaspoon chopped rosemary

  • 240ml water

Pat chops dry and season with 1 teaspoon salt and 1/2 teaspoons pepper, then dredge in flour, shaking off excess. Heat 1 tablespoon oil in a 12-inch heavy skillet (preferably deep) over medium-high heat until it shimmers. Brown chops in 2 batches, turning once, 3 to 4 minutes total per batch. Transfer to a plate.

Add remaining 2 tablespoons oil to skillet and cook onion and mushrooms with rosemary and 1/4 teaspoons each of salt and pepper over medium heat, stirring occasionally, until browned, about 7 minutes. Return chops and any meat juices from plate to skillet. Add water and simmer, covered, until chops are tender, about 30 minutes.
