Ingredients for Big-batch strawberry compote

  • 1,800 g strawberries, hulled, halved if large

  • 150 g caster sugar

  • 1 ml salt

  • 1 vanilla bean, split lengthwise, and/or 4 strips lemon zest (optional)

  • 15 ml fresh lemon juice

How to make Big-batch strawberry compote

  1. Combine the strawberries, sugar, salt, and 60 ml of water in a small saucepan.

  2. Scrape in the vanilla seeds and add the vanilla pod, or include the lemon zest if using.

  3. Bring the mixture to a simmer over medium heat and cook for 40–45 minutes, stirring occasionally. Use a wooden spoon to break up the strawberries at the beginning of cooking until the fruit is tender and the juices are thick enough to coat the back of a spoon.

  4. Remove the vanilla pod and/or lemon zest from the compote, then stir in the lemon juice.

  5. Do Ahead: The compote can be prepared up to 5 days in advance. Allow it to cool, then cover and chill in the fridge.
