Ingredients for Coconut rice
180 g raw thai jasmine rice
120 ml coconut milk, preferably freshly extracted
240 ml water
25 g caster sugar
3 g salt
120 ml coconut cream, preferably freshly extracted
How to make Coconut rice
Rinse the rice in a fine-mesh sieve or colander under cold running water until the water runs clear.
Transfer the rinsed rice to a rice cooker.
Add the coconut milk, water, sugar, and salt to the rice. Stir to combine.
Cover the rice cooker and turn it on.
Once the rice cooker turns off, uncover it and pour the coconut cream evenly over the top of the rice without stirring it in.
Replace the lid and keep the rice warm until serving.
