Ingredients for Ginger-scallion ramen noodles
30 g ginger, peeled, finely chopped
4 garlic cloves, finely chopped
1 large bunch spring onions, very thinly sliced, divided
120 ml grapeseed oil or other neutral oil
30 ml reduced-salt soy sauce
15 ml unseasoned rice vinegar
5 ml toasted sesame oil
5 ml freshly ground black pepper
2 g sugar
kosher salt, to taste
4 packs (140 g each) wavy ramen noodles, preferably fresh
toasted sesame seeds and chilli oil, for serving
How to make Ginger-scallion ramen noodles
Toss the ginger, garlic, and two-thirds of the scallions in a large bowl until well combined.
Heat the grapeseed oil in a small saucepan over high heat until hot and shimmering, about 2 minutes.
Immediately pour the hot oil over the aromatics in the bowl. The scallions will sizzle, turn bright green, and wilt almost immediately. Let the mixture sit for 5 minutes.
In the meantime, mix the soy sauce, vinegar, sesame oil, pepper, sugar, and the remaining scallions into the oil mixture; season with salt. Allow the sauce to sit for 15 minutes for the flavours to meld. Taste the sauce and adjust the seasoning with more salt if needed.
Cook the noodles according to the package instructions, then drain well.
Toss the cooked noodles in a large bowl with as much or as little of the sauce as you prefer.
Divide the noodles among bowls and sprinkle with sesame seeds. Serve with chili oil on the side.
