Ingredients for Caramelized plantain parfait
90 g virgin coconut oil
4 ripe (spotted) plátanos manzanos or 2 large ripe (black) plantains, peeled, sliced in half lengthwise
kosher salt (to taste)
720 ml plain unsweetened coconut milk yogurt or Greek yogurt
2 ripe mangoes, thinly sliced
toasted nuts (for serving)
seeds (for serving)
unsweetened shredded coconut (for serving)
How to make Caramelized plantain parfait
Heat oil in a large non-stick frying pan over medium-high heat.
Cook the plantains, turning once, until deep golden brown, about 3 minutes on each side.
Transfer the cooked plantains to paper towels to drain, then season with salt.
Divide the yogurt among bowls.
