This crisp fennel and celeriac salad is a vibrant celebration of winter root vegetables and bitter leaves. By using a mandoline to finely shave the vegetables, you create a delicate texture that allows the bright lemon dressing and high-quality olive oil to coat every surface. The addition of radicchio provides a sophisticated bitter edge, while the heavy use of fresh parsley and marjoram ensures every mouthful is fragrant and herbaceous.
As a naturally vegan dish, it makes a refreshing starter or a sophisticated side for a larger meal. The combination of peppery celery leaves and sweet fennel fronds ensures nothing goes to waste while adding additional layers of flavour. It is an excellent choice for those seeking a light, vitamin-rich dish that brings a sense of freshness to the table during the colder months.
