This vibrant garlic mojo sauce is a versatile vegan condiment that brings a punchy, zesty lift to almost any savoury dish. By gently infusing olive oil with aromatic garlic, earthy cumin and dried oregano, you create a deeply flavoured base that balances perfectly against the sharp acidity of fresh lime and orange juice. The addition of sliced Fresno chilli provides a subtle heat and a pop of colour, making it as visually appealing as it is delicious.
Perfect as a bright marinade for roasted vegetables or a zingy dressing for grain bowls, this homemade sauce is a fantastic staple to keep in the fridge. It can be prepared up to a week in advance, allowing the citrus and garlic flavours to mellow and meld beautifully over time.
