Green Chilli Charmoula

This vibrant green chilli charmoula is a punchy, herb-driven condiment that brings a burst of North African flavour to your kitchen. A versatile vegan sauce, it combines the aromatic warmth of toasted cumin and coriander seeds with the fresh, zesty notes of basil and coriander. By lightly charring the spring onions and chillies under the grill, you introduce a subtle smokiness that balances the heat and brightness of the fresh herbs.

Traditionally used as a marinade or dipping sauce, this homemade herb oil is excellent drizzled over roasted vegetables, grilled flatbreads, or swirled into a bowl of chickpeas. It is a fantastic healthy addition to your meal prep repertoire, as the flavours deepen beautifully when made a day in advance. Serve it as a colourful centrepiece for a plant-based feast or a tangy relish for a summer barbecue.

Ingredients for Green Chilli Charmoula

  • 1/2 teaspoons coriander seeds

  • 1/2 teaspoons cumin seeds

  • 2 spring onions

  • 2 serrano chillies

  • 1/2 cup chopped basil

  • 1/2 cup chopped coriander

  • 1/4 cup olive oil

  • Kosher salt, freshly ground pepper

  • A spice mill or a mortar and pestle

Toast coriander seeds in a dry small skillet over medium heat, swirling pan often and adding cumin seeds during the last 30 seconds, until fragrant, about 2 minutes. Let cool, then finely grind in spice mill or with mortar and pestle.

Prepare a grill for medium-high heat. Grill spring onions and chillies, turning occasionally with tongs, until lightly charred and blistered in spots but crisp-tender, about 2 minutes for spring onions and about 5 minutes for chillies. Transfer to a cutting board. Let cool slightly, then chop and place in a small bowl. Add basil, coriander, oil, and ground spices to spring onions and chillies and mix well; season with salt and pepper.

Charmoula can be made 1 day ahead. Cover and chill.
