This homemade blue cheese dip is a sophisticated addition to any party platter or seasonal gathering. By mashing crumbled blue cheese into a base of soured cream and mayonnaise, you create a wonderfully thick texture that is perfect for scooping. A hint of red wine vinegar and fresh thyme adds a layer of brightness and herbal fragrance, cutting through the richness of the cheese to create a perfectly balanced savoury snack.
As a versatile vegetarian dish, this dip works beautifully with a colourful array of fresh vegetables like endive leaves, crunchy radishes, or blanched green beans. It is an ideal make-ahead option for busy hosts as the flavours develop beautifully after a few hours in the fridge. Serve it chilled for a simple yet indulgent appetizer that guests will love.
