Creamy Rice Grits with Tomato Relish

This comforting vegetarian dish offers a sophisticated twist on traditional Southern soul food. By using rice grits—broken grains of aromatic Carolina Gold rice—you create a base that is naturally gluten-free and incredibly creamy. The richness of the Parmesan and butter provides a deeply savoury foundation, which is perfectly balanced by the bright, acidic notes of the fresh lemon juice.

Ingredients for Creamy Rice Grits with Tomato Relish

  • 300g chopped fresh tomatoes

  • 1 small shallot, finely chopped

  • Kosher salt

  • freshly ground pepper

  • 425g Carolina Gold rice grits

  • 190g finely grated Parmesan

  • 60g (1/2 stick) unsalted butter

  • 45ml fresh lemon juice

  • 45ml extra-virgin olive oil

Mix tomatoes and shallot in a small bowl. Season with salt and pepper; set aside.

Bring 2875ml water to a boil in a large saucepan. Stir in grits and season with salt. Reduce heat to medium; simmer grits until almost tender, about 15 minutes. Drain, reserving 475ml cooking liquid; return liquid and grits to saucepan. Stir over medium heat until creamy, 5-6 minutes. Add cheese and butter; stir to melt. Stir in lemon juice; season with salt and pepper. Transfer to a large wide bowl, forming a well in centre. Stir oil into tomato mixture; pour into well.
