This comforting vegetarian dish offers a sophisticated twist on traditional Southern soul food. By using rice grits—broken grains of aromatic Carolina Gold rice—you create a base that is naturally gluten-free and incredibly creamy. The richness of the Parmesan and butter provides a deeply savoury foundation, which is perfectly balanced by the bright, acidic notes of the fresh lemon juice.
Served with a vibrant tomato and shallot relish, this recipe is ideal for a nourishing midweek supper or a weekend brunch. The contrast between the warm, velvety rice and the cool, olive-oil-macerated tomatoes creates a wonderful depth of flavour. For a complete meal, try serving it alongside some wilted seasonal greens or a poached egg for extra protein.
