These crispy aubergine fritters with honey offer a delightful balance of salty and sweet flavours, inspired by the traditional tapas dishes of Andalusia. Soaking the aubergine in milk before frying ensures a creamy, tender interior while helping to remove any bitterness. The contrast between the light, seasoned flour coating and the floral notes of orange blossom honey makes this a sophisticated yet simple vegetarian snack.
This versatile dish works beautifully as part of a classic tapas spread or as a unique starter for a dinner party. The secret lies in frying the slices until they achieve a deep golden hue, ensuring a satisfying crunch that yields to a melt-in-the-mouth centre. Serve them piping hot with an extra small bowl of honey on the side for dipping.

Olive or sunflower oil for deep-frying
Orange blossom honey or other aromatic runny honey
How to make Aubergine Fritters with Honey
Back to contentsPeel the aubergines and cut them into slices about 1/3 inch thick. Put them in a bowl, add enough milk to cover, and put a small plate on top to hold them down. Let soak for 1 to 2 hours; drain.
Cover a plate with plenty of flour mixed with a sprinkling of salt. Working in batches, turn the aubergine slices in this so that they are entirely covered with flour, then shake them to remove the excess. Deep-fry in sizzling but not too hot oil, turning the slices over as soon as the first side is brown. Drain on paper towels.
Serve hot with a dribble of honey, and let people help themselves to more honey if they like.
