Ingredients for Syrniki (сирники / farmer’s cheese pancakes)
2 egg yolks
450 g tvorog or farmer’s cheese, homemade or store-bought
100 g caster sugar
90 g plain flour
2.5 ml baking powder
pinch of salt
30 ml double cream (optional)
30 g unsalted butter, softened
30 ml vegetable oil
soured cream, for garnish
How to make Syrniki (сирники / farmer’s cheese pancakes)
In a medium bowl, beat the egg yolks into the farmer’s cheese, then stir in the sugar.
In a separate bowl, mix together 75 g of the flour, the baking powder, and the salt, then add to the cheese mixture. If the mixture seems dry, add a little single cream.
Place the butter and oil in a large non-stick frying pan over medium-low heat and melt the butter.
Sprinkle the remaining 30 g of flour onto a plate and dust your hands with some flour.
Using your hands or a spoon, scoop out about 30 ml of the batter and set it on the floured plate. Gently shape it into a round patty about 5 cm in diameter, coating it lightly on all sides with flour. Repeat with the remaining batter.
Carefully transfer the patties to the frying pan and cook slowly until the undersides are browned, about 3 minutes.
Turn the patties using a spatula and cook until the other sides are browned, an additional 3–4 minutes.
Serve immediately with sour cream.
