These grilled corn and feta crostini offer a vibrant, vegetarian take on a classic Mediterranean starter. By charring fresh sweetcorn until smoky and tender, you create a beautiful experimental contrast against the cool, tangy base of crema mexicana and salty crumbled feta. It is a sophisticated yet simple way to make the most of seasonal produce, bringing a bright burst of summer flavour to any dining table.
Ideal as a light lunch or a stylish party appetiser, these crostini are remarkably easy to assemble. The crunch of garlic-rubbed ciabatta provides the perfect foundation for the citrusy lime dressing and aromatic coriander. Whether you are hosting a garden gathering or looking for a fresh evening snack, this dish is a healthy, homemade choice that delivers a professional finish with minimal effort.
