Ingredients for Mashed plantains with fried eggs (mangú de plátanos)

  • 2 large plantains, peeled, cut in half lengthwise

  • ½ red onion, thinly sliced

  • 60 ml white vinegar

  • 30 ml extra-virgin olive oil or unsalted butter, divided

  • 1 tsp sea salt

  • 1 tsp freshly cracked pepper

  • 30 ml vegetable oil

  • 2 eggs

  • 1 avocado, pitted, peeled, sliced

How to make Mashed plantains with fried eggs (mangú de plátanos)

  1. Bring a large pot of salted water to a boil.

  2. Add the plantains and boil for about 25 minutes, or until fork-tender. Drain the plantains, reserving 125 ml of the cooking water.

  3. Meanwhile, place the red onion in a small bowl and cover with vinegar.

  4. Transfer the drained plantains to a medium bowl. Add the reserved cooking water, 15 ml of olive oil, salt, and pepper. Mash the plantains until they reach the consistency of mashed potatoes.

  5. In a medium frying pan, heat the vegetable oil over medium heat. Drain the red onions and discard the vinegar. Add the onions to the pan and cook, stirring often, for about 5 minutes, or until soft and translucent. Transfer the onions to a plate.

  6. In the same pan (there's no need to wipe it clean), heat the remaining 15 ml of olive oil over medium heat. Carefully crack the eggs into the pan, leaving space between each egg. Cook for 3–4 minutes, or until the whites are set and no longer translucent, while keeping the yolks runny.

  7. To serve, divide the mashed plantain between plates. Top with a fried egg, cooked onions, and a few slices of avocado. Season with salt and pepper to taste.
