Ingredients for One of each soup

  • 225 g boiling potato, peeled, coarsely chopped

  • 1 medium onion, coarsely chopped

  • 125 g celery heart, coarsely chopped (inner pale stalks with leaves)

  • 1 large apple (preferably Granny Smith), peeled, coarsely chopped

  • 1 firm-ripe banana, coarsely chopped

  • 570 ml chicken stock

  • 240 ml double cream

  • 15 g unsalted butter

  • 5 g curry powder

  • 5 g salt

  • 15 g chopped fresh chives

How to make One of each soup

  1. Simmer the vegetables and fruits in broth in a 2.5 L heavy saucepan over medium heat, covered, for about 12 minutes, or until very tender.

  2. Stir in the single cream, butter, curry powder, and salt, heating gently until hot but do not allow it to boil.

  3. Purée the soup in a blender until smooth, taking care when blending hot liquids.

  4. If desired, thin the soup with a little water to reach your preferred consistency.

  5. Serve the soup sprinkled with fresh chives.
