Ingredients for Second City Diner veggie burger
960 ml water
1 onion, finely chopped
3 stalks celery, finely chopped
60 ml reduced-salt soy sauce
10 g onion powder
10 g garlic powder
2 g freshly ground black pepper
360 g rolled oats (not quick-cooking)
340 g mushrooms, finely chopped
60 g plain flour
How to make Second City Diner veggie burger
Place the water in a large pot and add the onion, celery, soy sauce, onion powder, and garlic powder.
Bring to a boil, then reduce the heat and simmer for 5 minutes.
Stir in the oats, mushrooms, and flour, and cook for an additional 5 minutes.
Transfer the mixture to a bowl and chill for at least 1 hour, preferably longer.
Preheat the oven to 180°C (conventional).
Shape the chilled mixture into burger-sized patties and place them on baking trays.
Bake for 15 minutes, then remove from the oven and let rest for 5 minutes.
Carefully flip the patties over and bake for another 10 minutes.
Before serving, place the baked patties on a non-stick griddle and grill for about 7 minutes on each side, until browned.
Serve the patties on buns with your choice of toppings.
