Ingredients for Togarashi cheesecake with sorghum

  • 240 g gingersnap cookie crumbs

  • 37 g sugar

  • 75 g unsalted butter, melted

  • 115 g fresh goat cheese, at room temperature

  • 170 g cream cheese, at room temperature

  • 120 ml buttermilk

  • 100 g sugar

  • 4 large eggs

  • grated zest and juice of 1 lemon

  • 5 ml togarashi (see note)

  • about 15 ml sorghum for garnish

How to make Togarashi cheesecake with sorghum

  1. Preheat the oven to 180°C (fan) / 190°C (conventional).

  2. In a medium bowl, stir together the biscuit crumbs, sugar, and melted butter with a fork until the crumbs are evenly moistened. Press the mixture evenly onto the bottom of a 23 cm springform pan. Bake for 10 minutes, or until golden brown and crispy. Allow to cool completely.

  3. Reduce the oven temperature to 160°C (fan) / 170°C (conventional).

  4. In the bowl of a stand mixer fitted with the paddle attachment (or using a handheld mixer), beat together the goat cheese, cream cheese, and buttermilk until smooth and fluffy, about 4 to 5 minutes. Gradually beat in the sugar until combined. Add the eggs one at a time, mixing well after each addition. Incorporate the lemon zest and juice, followed by ½ teaspoon of the togarashi.

  5. Pour the filling into the springform pan. Sprinkle the top with the remaining ½ teaspoon of togarashi. Wrap the pan in foil to prevent leaks and place it in a large roasting tin. Pour enough hot water into the roasting tin to come one-third of the way up the sides of the cake pan.

  6. Bake the cheesecake for 1 hour and 20 minutes, or until it is slightly puffed. Remove the cake pan from the water bath and allow it to cool to room temperature. Chill in the refrigerator for at least 2 hours. (The cheesecake can be tightly wrapped in cling film and refrigerated for up to 5 days.)

  7. To serve, run a thin knife around the sides of the cake pan and release the sides of the pan. Slide the cheesecake onto a serving platter. Drizzle the top with a little sorghum, slice, and serve.
