Ingredients for Tomato brown butter
230 g large tomato
120 g unsalted butter, softened
kosher salt (to taste)
freshly ground black pepper (to taste)
How to make Tomato brown butter
Place the tomato in a blender and purée until smooth. Strain the purée through a fine-mesh sieve, aiming for about 120 ml.
Add the butter to a large frying pan and gently cook over medium heat until it begins to brown and releases a nutty aroma.
Stir in the smooth tomato purée, taking care as it may splatter, and simmer for 1–2 minutes until slightly cooked but still bright in colour.
Note that the mixture will not emulsify, which is perfectly fine. Season with salt and pepper, then set aside.
