Ingredients for BBQ baby back ribs

  • 450–680 g baby back ribs

  • 960 ml apple juice

  • 120 ml cider vinegar

  • 120 ml barbecue sauce

How to make BBQ baby back ribs

  1. Place the rack of ribs bone side up on a clean surface. Slip the tip of a knife under the translucent membrane at one end, loosening it from the bone. Once you have lifted enough to get a good grip, grasp the membrane with a piece of kitchen towel and peel it off the rack. Repeat this process for the remaining racks, if any. Cut the racks in half crosswise.

  2. Stack the ribs in the Instant Pot. Pour in the apple juice and vinegar. Secure the lid and set the Pressure Release to Sealing. Select the Meat/Stew setting and set the cooking time for 20 minutes at high pressure. For ribs that are tender and falling off the bone, set the cooking time for 25 minutes.

  3. Allow the pressure to release naturally for 15 minutes. While the pressure is releasing, preheat the oven to 200°C (fan) and line a baking tray with foil or a silicone baking mat.

  4. After 15 minutes, move the Pressure Release to Venting to release any remaining steam. Open the pot and, using tongs, transfer the ribs to the prepared baking tray. Discard the cooking liquid.

  5. Brush the ribs on both sides with barbecue sauce, then bake in the preheated oven for about 10 minutes, until the sauce is caramelised and browned.

  6. Remove the ribs from the oven, cut them apart, and serve.
