Ingredients for Chicken and rice meatballs with hummus

  • 6 spring onions, thinly sliced

  • 2 garlic cloves, finely chopped

  • 25 g ginger, peeled, finely chopped

  • 450 g minced chicken

  • 225 g cooled cooked white rice

  • 60 ml extra-virgin olive oil

  • 10 g hawaij, baharat, curry powder, or other spice blend

  • 5 ml Diamond Crystal or 2.5 ml Morton kosher salt, plus more

  • 1 small white onion, thinly sliced

  • 4 small dill pickles, sliced

  • 2 Persian cucumbers, sliced

  • 100 g parsley leaves with tender stems

  • 15 ml fresh lemon juice

  • Hummus and lemon wedges (for serving)

How to make Chicken and rice meatballs with hummus

  1. Preheat the oven to 220°C (fan 200°C).

  2. In a medium bowl, gently mix the scallions, garlic, ginger, minced chicken, rice, oil, hawaij, and 1 tsp Diamond Crystal or ½ tsp Morton kosher salt, taking care not to overwork the mixture.

  3. Form the mixture into 12 balls and place them on a rimmed baking tray.

  4. Bake for 15 minutes, or until the meatballs are lightly browned and cooked through.

  5. In a separate medium bowl, toss together the onion, pickles, cucumbers, parsley, and lemon juice until well combined. Season the salad with salt to taste.

  6. Spread hummus on plates, then top with the meatballs and salad.

  7. Serve with lemon wedges on the side.
