Ingredients for Big-batch marinated bell peppers
Vegetable oil, for grilling
8 large red, yellow, and/or orange peppers
180 ml extra-virgin olive oil
60 ml white wine vinegar
15 g kosher salt
5 g crushed red pepper flakes
How to make Big-batch marinated bell peppers
Preheat the grill to a high heat.
Clean the grates and lightly oil them.
Grill the peppers, turning occasionally, until the skins are blackened and blistered all over, approximately 15–20 minutes.
Transfer the grilled peppers to a large bowl, cover with a lid, plate, or cling film, and let them cool.
Once cooled, remove the skins and seeds from the peppers and discard them.
Tear the flesh into strips approximately 5 cm wide.
Transfer the strips to a clean large bowl and toss with olive oil, vinegar, salt, and red pepper flakes.
Allow the mixture to marinate for at least 30 minutes.

The peppers can be marinated up to 5 days in advance. Transfer to an airtight container and chill in the refrigerator.
