Ingredients for Brad's spoon sauce
30 g raw pistachios
10 prunes, pitted, coarsely chopped
1 garlic clove, finely grated
60 g finely chopped parsley
30 g finely chopped mint
15 g finely chopped tarragon
60 ml kimchi or sauerkraut brine
30 ml Champagne vinegar or white wine vinegar
kosher salt (to taste)
180 ml extra-virgin olive oil
How to make Brad's spoon sauce
Toast the pistachios in a dry frying pan over medium-low heat, tossing occasionally, for about 5 minutes or until browned in spots. Let them cool, then finely chop.
In a medium bowl, gently mix the chopped pistachios, prunes, garlic, parsley, mint, tarragon, kimchi brine, and vinegar until combined. Season with salt to taste.
Whisk in the oil, then taste the sauce and adjust the seasoning with more salt if needed.
