60 g unsalted butter, room temperature
30 g white miso
1/2 serrano chilli, finely grated
40 g ginger, peeled, finely grated
340 g Romano, wax, and/or green beans
10 ml extra-virgin olive oil
lime wedges (for serving), toasted sesame seeds (optional)
How to make Skillet-charred summer beans with miso butter
Mix the butter, miso, chilli, and ginger together in a small bowl until smooth.
Heat a large frying pan, preferably cast iron, over medium-high heat.
Toss the beans with the oil in a medium bowl, then transfer them to the frying pan. Cook, tossing occasionally, until they are charred in spots and crisp-tender, about 4 minutes.
Spread the miso butter onto a serving platter. Arrange the beans on top; their residual heat will melt the butter into a saucy dressing.
Sprinkle with sesame seeds and squeeze some lime wedges over the dish before serving.
