This vibrant bulgur risotto with corn and prawns offers a nutritious and high-protein twist on the classic Italian favourite. By swapping traditional arborio rice for nutty bulgur wheat, this dish provides a satisfying texture that pairs beautifully with succulent prawns and the natural sweetness of golden corn kernels. Infused with garlic, fresh coriander, and a hint of chilli, it is a light yet deeply flavourful meal that brings a touch of brightness to your dinner table.
Perfect for a quick midweek supper, this healthy grain dish is both wholesome and simple to prepare. The addition of crunchy red peppers and zesty lime juice ensures a balanced profile that feels fresh rather than heavy. Serve it warm with extra lime wedges for a refreshing finish that the whole family will enjoy.

How to make Bulgur Risotto with Corn and Prawns
Back to contentsHeat oil in a large pot over medium heat. Cook garlic, stirring, for 30 seconds; add bulgur and salt; stir 1 minute more. Gradually stir in 475ml boiling water, 120ml at a time (waiting until bulgur absorbs it to add more), until bulgur is slightly soupy, 8 to 10 minutes. (You might not use all the water.) Add prawns. Cook, stirring constantly, until it turns pink, 2 to 3 minutes. Add corn, pepper, juice from 1 lime and red pepper flakes; stir, adding water to keep mixture creamy. Cook, stirring, until corn and pepper are warmed through, 1 to 2 minutes. Add coriander; serve with lime wedges.
