These ham and rice croquettes are a wonderful way to transform simple store-cupboard staples into a sophisticated, high-protein snack. By combining chilled white rice with salty, savoury ham and sharp parmesan, you create a rich filling that contrasts beautifully with a crisp, golden breadcrumb coating. They make a fantastic addition to a weekend brunch or can be served as an impressive appetiser when entertaining guests.
Ideal for those looking for a filling, protein-rich dish, these croquettes are also a brilliant solution for using up leftover rice from a previous meal. The recipe is straightforward and quick to prepare, requiring only a few minutes in a frying pan to achieve that perfect crunch. Serve them alongside a zesty garlic aioli or a simple green salad for a balanced and satisfying lunch.
